Ingredients

For the Filling

  • 1 cup Sour Cream Greek yogurt can be used as a healthier substitute.
  • 1 cup Shredded Cheddar Cheese Monterey Jack or Pepper Jack can substitute.
  • 1 can Chopped Green Chilies Diced jalapeños can be used for increased spiciness.

For the Sauce

  • 16 oz Velveeta Cheese Cream cheese can be used, though the flavor will differ.
  • 1 can Diced Tomatoes with Green Chilies Fresh tomatoes or tomato sauce can be alternatives.

For the Tortillas

  • 8 pieces Tortillas Gluten-free tortillas are available for gluten avoidance.

Directions

  • Preheat the oven to 350°F (175°C).
  • Combine shredded chicken, taco seasoning, sour cream, shredded cheddar cheese, and green chilies in a large bowl. Mix well.
  • Melt Velveeta cheese and diced tomatoes together in a saucepan over medium-high heat, stirring until smooth.
  • Scoop about ½ to ¾ cup of the chicken mixture into each tortilla and roll them tightly.
  • Arrange the rolled enchiladas seam-side down in a greased 9×13 casserole dish.
  • Pour the melted queso sauce evenly over the enchiladas.
  • Bake for 20-25 minutes, until bubbly and heated through.

Notes

Optional: Garnish with chopped cilantro or sliced jalapeños. Assemble enchiladas up to 24 hours prior; cover and refrigerate to enhance flavors.
