Ingredients

For the Pasta

  • 8 oz Dried Short Pasta Choose shapes like rigatoni, shells, or ziti
  • 1 tbsp Kosher Salt For seasoning the pasta water

For the Sauce

  • 2 cups Butternut Squash Cut into 1-½-inch cubes
  • 1 medium Yellow Onion/Shallot Shallots work for a subtler taste
  • 3 cloves Garlic Fresh minced garlic
  • 10 leaves Fresh Sage Fresh preferred, dried can substitute
  • 2 tbsp Extra Virgin Olive Oil For roasting
  • 1/4 tsp Crushed Red Pepper For a hint of heat
  • 1/4 tsp Black Pepper
  • 1 cup Vegetable Broth For creamy texture
  • 1/2 cup Parmesan Cheese Plus more for serving
  • 2 tbsp Butter

Instructions

Directions

  • Preheat the oven to 425°F (220°C) with the rack positioned in the center.
  • Toss the butternut squash and onion with olive oil, kosher salt, crushed red pepper, and black pepper on a baking sheet.
  • Add garlic and sage to the pan, stir well, and roast for an additional 10–15 minutes.
  • Reserve 1½ cups of the roasted mixture; in a food processor, blend the remaining roasted squash, sage, pan juices, warm vegetable broth, Parmesan, and butter until smooth.
  • In a large pot, boil salted water and cook the pasta until al dente, then drain.
  • Gently toss the pasta with the warm sauce and reserved squash mix, serve hot with extra Parmesan.

Notes

This dish can be modified with pumpkin or kale for variations. Serve with a side salad for a complete meal.
