Basic Instructions
Fill a pot with water and gently place the eggs inside. Bring to a rolling boil, then cover and remove from heat. Let sit for 10-12 minutes.
Move the eggs to an ice water bath for 5-10 minutes to cool down quickly.
Carefully cut each egg in half lengthwise, then scoop out the yolks into a bowl using a spoon.
Using a fork, mash the yolks until crumbly. Blend in Dijon mustard, mayonnaise, and chives until creamy.
Generously spoon or pipe the yolk mixture back into each egg white half.
Dust the filled eggs with paprika and refrigerate until ready to serve.
