Instructions

How to Make

  • Begin by melting 2 tablespoons of butter in a large pot over medium heat. Once the butter is bubbly, add 1 cup of sliced baby bella mushrooms, 1 minced shallot, and 2 minced garlic cloves. Cook for about 2 minutes until everything is fragrant and the mushrooms are tender.
  • Sprinkle in 1 teaspoon of dried dill, 1 teaspoon of dried thyme, and 1 teaspoon of paprika. Stir everything together well. Then, whisk in 2 tablespoons of Worcestershire sauce, 1 cup of white wine, and 4 cups of beef broth. Taste and adjust seasoning with salt and freshly ground pepper, if needed.
  • Raise the heat to bring the mixture to a gentle boil. Once boiling, add 1 cup of pearl couscous, stir it in, cover the pot, and reduce the heat to medium. Let it simmer for 20 minutes—don't peek during this time!
  • After 20 minutes, carefully remove the lid and check the couscous; it should be soft and chewy. Add an extra few minutes if it’s not quite right.
  • Once the couscous reaches the perfect texture, remove the pot from the heat. Stir in 1 cup of half and half for that luscious creaminess. If you like, swirl in a dollop of sour cream for added richness.
  • Ladle the soup into bowls, top with an additional dollop of sour cream if desired, and serve alongside warm crusty bread for dipping.

Notes

For an optional garnish, sprinkle with freshly chopped parsley for added color and freshness.
