Instructions

How to Make Hearty Comforting Potsticker Soup

  • Heat 1 tablespoon of olive oil in a stockpot over medium-high heat. Add the shiitake mushrooms and cook until golden brown, about 3-5 minutes.
  • Incorporate the remaining oil along with minced garlic and ginger. Sauté for 1-2 minutes until fragrant.
  • Add the vegetable broth and soy sauce to the pot. Stir well and bring to a boil.
  • Add the frozen potstickers, half the scallions, and bok choy into the boiling broth. Lower the heat and simmer for about 3-4 minutes.
  • Stir in the toasted sesame oil and season to taste with extra soy sauce and freshly-ground black pepper.
