Mix Butter and Sugar: Cream together the butter and sugar until fluffy, about 2-3 minutes. Add in the vanilla extract.
Combine Dry Ingredients: Sift flour and salt together, then add to the butter mixture while mixing at low speed until a soft dough forms.
Chill the Dough: Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll and Cut Cookies: Roll out the chilled dough to about ⅛-inch thickness and cut into shapes.
Bake and Assemble: Bake for 10-12 minutes. After cooling, spread raspberry preserves on one cookie and sandwich with another. Dust with powdered sugar.
