Ingredients

Vinaigrette

  • 1/2 cup Canola or Vegetable Oil
  • 1/4 cup Apple Cider Vinegar
  • 2 tablespoons Water
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Sugar
  • to taste Salt
  • to taste Black Pepper

Salad Base

  • 6 cups Romaine Lettuce
  • 2 cups Honeycrisp Apples
  • 1 cup Bacon Pieces omit for vegetarian
  • 1/2 cup Dried Cranberries
  • 1/2 cup Bleu Cheese Crumbles substitute feta for milder flavor
  • 1/2 cup Pecan Halves

Instructions

Preparation

  • In a small bowl, whisk together canola or vegetable oil, apple cider vinegar, water, Dijon mustard, sugar, salt, and pepper until smooth. Allow the mixture to chill for added flavor depth.
  • Chop the romaine lettuce into bite-sized pieces, rinse thoroughly, and dry them well.
  • Dice the sweet Honeycrisp apples into bite-sized pieces.
  • In a large bowl, combine the chopped lettuce with half of the chilled vinaigrette. Toss gently to coat.
  • Divide the lettuce mixture into individual bowls. Top each with diced apple, bleu cheese, dried cranberries, bacon, and pecans.
  • Drizzle remaining vinaigrette over the salads and toss lightly just before serving.

Notes

Garnish with extra chopped pecans for added crunch. Best to keep dressing separate until serving to maintain freshness.
