Ingredients

For the Base

  • 2 cups Cooked Rice Any variety such as white, brown, or quinoa.
  • 2 pieces Chicken Breasts Slice in half for quicker cooking.

For the Seasoning

  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • to taste Salt and Pepper

For the Cooking

  • 2 tbsp Olive Oil
  • 1 cup Corn Kernels Fresh or frozen.
  • 1 medium Diced Onion
  • 1 small Jalapeño Optional.

For the Sauce

  • 1/2 cup Mayonnaise
  • 1/2 cup Mexican Crema or Sour Cream
  • 1 tbsp Tajín
  • 2 tbsp Lime Juice
  • 1/4 cup Milk For desired consistency.

For the Toppings

  • 1 medium Avocado
  • 1/2 cup Cotija Cheese For sprinkling on top.
  • 1/4 cup Fresh Cilantro For garnish.
  • 1 wedge Lime For serving.

Instructions

How to Make

  • In a bowl, mix together mayonnaise, sour cream, tajín, lime juice, and milk until smooth.
  • Sprinkle salt, pepper, chili powder, cumin, paprika, garlic powder, and oregano on both sides of the chicken breasts. Sauté in a skillet with olive oil for about 6-7 minutes, or until cooked through.
  • In the same skillet, add the corn, diced onion, and jalapeño. Sauté until the corn is charred and onion is tender. Mix in half of the prepared sauce.
  • Divide the cooked rice among serving bowls. Top with slices of sautéed chicken and the creamy corn mixture.
  • Add slices of avocado, a sprinkle of cotija cheese, and cilantro. Serve with lime wedge and remaining sauce.
