Instructions
How to Make
In a bowl, mix together mayonnaise, sour cream, tajín, lime juice, and milk until smooth.
Sprinkle salt, pepper, chili powder, cumin, paprika, garlic powder, and oregano on both sides of the chicken breasts. Sauté in a skillet with olive oil for about 6-7 minutes, or until cooked through.
In the same skillet, add the corn, diced onion, and jalapeño. Sauté until the corn is charred and onion is tender. Mix in half of the prepared sauce.
Divide the cooked rice among serving bowls. Top with slices of sautéed chicken and the creamy corn mixture.
Add slices of avocado, a sprinkle of cotija cheese, and cilantro. Serve with lime wedge and remaining sauce.
