Instructions
How to Make Easy Potsticker Soup
Heat sesame oil in a large pot over medium heat. Add garlic, ginger, carrots, and mushrooms, and sauté for 5 minutes until fragrant and the veggies have softened slightly.
Toss in the chopped bok choy and cook for another 2 minutes, just until wilted and vibrant in color.
Add low sodium broth, rice vinegar, soy sauce, brown sugar, and sriracha. Stir well and let it simmer for 5-10 minutes to meld the flavors.
Prepare the frozen potstickers as per the package instructions. Once ready, gently add them to the pot.
In a separate bowl, mix cornstarch with cold water to create a slurry. Pour this mixture into the soup while stirring.
Ladle the soup into bowls and top with freshly chopped green onions. Optionally, drizzle with extra sriracha.
Notes
