Instructions

How to Make Easy Potsticker Soup

  • Heat sesame oil in a large pot over medium heat. Add garlic, ginger, carrots, and mushrooms, and sauté for 5 minutes until fragrant and the veggies have softened slightly.
  • Toss in the chopped bok choy and cook for another 2 minutes, just until wilted and vibrant in color.
  • Add low sodium broth, rice vinegar, soy sauce, brown sugar, and sriracha. Stir well and let it simmer for 5-10 minutes to meld the flavors.
  • Prepare the frozen potstickers as per the package instructions. Once ready, gently add them to the pot.
  • In a separate bowl, mix cornstarch with cold water to create a slurry. Pour this mixture into the soup while stirring.
  • Ladle the soup into bowls and top with freshly chopped green onions. Optionally, drizzle with extra sriracha.

Notes

Customize with additional vegetables like snow peas or zucchini. Adjust spice level to taste.
