Preparation Steps

  • Heat olive oil in a large sauté pan over low-medium heat. Add minced garlic, stirring for 1-2 minutes until fragrant and golden.
  • Mix in sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper; cook for 1 minute until aromas meld beautifully.
  • Stir in chickpeas, vegetable broth, tomato paste, vegan cream, and spinach; bring to a gentle simmer and cook for 5 minutes.
  • Taste and adjust seasoning if needed; add more chili flakes for additional heat if desired.
  • Remove from heat and stir in chopped basil and vegan parmesan cheese if using.
  • Transfer to plates and serve immediately with crusty bread, rice, pasta, or roasted sweet potatoes.
