How to Make Easy Cappuccino Muffins
Blend the cream cheese, sugar, instant coffee, and vanilla until smooth. Refrigerate for about 15 minutes.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
Dissolve the instant coffee granules into the milk, then mix in the melted butter, egg, and vanilla extract until smooth.
Pour the wet mixture into the bowl of dry ingredients, and gently stir until just moistened. Fold in the mini chocolate chips.
Preheat your oven to 375°F (190°C). Fill the muffin cups two-thirds full with batter.
