Instructions

  • Preheat the oven to 400°F (200°C) and prepare a muffin tray.
  • Blend the wet ingredients: milk, cottage cheese, eggs, olive oil, honey, and vanilla extract until smooth.
  • In a mixing bowl, whisk together the dry ingredients: all-purpose flour, cinnamon, salt, baking powder, and baking soda.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.
  • Fold in the flour-tossed blueberries gently into the batter.
  • Divide the batter among the muffin cavities and bake for 10 minutes, then reduce the temperature to 350°F (175°C) and bake for another 10-12 minutes.
  • Cool in the tray for a few minutes before transferring to a cooling rack.
