Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, cook the ground beef and chopped onions for about 5-7 minutes until the beef is browned; drain any excess liquid.
  • Stir in the Mexican seasoning and drained black beans, heating through for about 2 minutes. Season with salt and pepper to enhance those flavors, then set aside.
  • In a medium bowl, mix the tomato sauce and sour cream until smooth and well combined. Spread half of this creamy goodness on the bottom of a 9” x 13” baking dish.
  • Tear three flour tortillas into pieces and evenly cover the sauce in the baking dish, ensuring a robust base.
  • Layer one cup of shredded cheddar cheese and half of the seasoned beef mixture over the tortillas.
  • Create another layer with the remaining sauce, three more tortilla pieces, an additional cup of cheese, and the rest of the beef mixture. Top it off with the remaining cheese and sprinkle both jalapeño and red chili peppers on top.
  • Bake in the preheated oven for 25-35 minutes, or until the cheese is wonderfully melted and bubbly. Allow to stand for a few minutes before garnishing with fresh cilantro.
