For the Cookie Base

  • 1 cup Unsalted butter Room temperature
  • 1 large Egg Room temperature
  • 1 cup Granulated sugar
  • 1/4 teaspoon Kosher salt Pinch for best results
  • 1 teaspoon Vanilla extract Opt for pure vanilla
  • 1 cup All-purpose flour Gluten-free flour can be substituted
  • 1 teaspoon Baking powder Ensure it's fresh
  • 1 cup Semi-sweet or bittersweet chocolate chips Consider milk chocolate for a sweeter flavor
  • 1 cup Miniature marshmallows Regular marshmallows can be substituted

For the Meringue Topping

  • 2 large Egg whites Room temperature
  • 1/2 cup Brown sugar Light or dark brown sugar works

  • Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by greasing it and lining with parchment paper.
  • In a stand mixer, beat together the room-temperature unsalted butter, granulated sugar, and kosher salt until light and fluffy, about 2 minutes.
  • Add the large room-temperature egg and vanilla extract. Mix on low speed until just combined.
  • Gently mix in the all-purpose flour and baking powder until just combined, avoiding overmixing.
  • Evenly spread the dough into the prepared baking pan and sprinkle with chocolate chips and mini marshmallows.
  • In a clean mixer bowl, whip the egg whites, brown sugar, and a pinch of salt until shiny peaks form, about 4-5 minutes.
  • Spread the whipped meringue over the cookie base, covering the chocolate chips and marshmallows completely.
  • Bake in the preheated oven for 28-30 minutes until the top is golden-brown and starts cracking.
  • Allow to cool in the pan for at least 1 hour. Lift out using parchment and slice into bars.

Notes

Serve with a drizzle of chocolate sauce for extra indulgence. Customize with nuts or caramel as desired.
