  • Toss the halved Brussels sprouts and sliced carrots in a large bowl with olive oil, kosher salt, and freshly ground black pepper.
  • Spread the vegetables onto a parchment-lined baking sheet in a single layer.
  • Roast on the lowest rack for 15 minutes.
  • Flip and mix the vegetables, then roast for an additional 7 to 15 minutes until tender and golden brown.
