Ingredients

For the Pasta

  • 8 oz Pasta Choose your favorite type.

For the Sauté

  • 2 tbsp Olive Oil Can substitute with butter.
  • 8 oz Mushrooms Button, cremini, or shiitake work well.
  • 3 cloves Garlic Minced; fresh is best.
  • 4 cups Spinach Can substitute with kale or Swiss chard.

For the Sauce

  • 1 cup Heavy Cream Substitute half-and-half or coconut milk if desired.
  • 1/2 cup Parmesan Cheese Grated; can use nutritional yeast for a vegan option.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Pepper Adjust to taste.

Directions

  • Bring a large pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat, add sliced mushrooms and sauté for 5-7 minutes.
  • Stir in minced garlic and cook for 1 minute until fragrant. Then, toss in fresh spinach and sauté until wilted, about 2 minutes.
  • Pour in the heavy cream and let it simmer, then stir in the grated Parmesan until melted.
  • Toss the cooked pasta into the creamy sauce, season with salt and pepper, and mix well.
  • Plate your dish, garnishing with fresh basil if desired.

Notes

Garnish with additional Parmesan for extra flavor. Store leftovers in an airtight container for up to 3 days.
