Directions
Bring a large pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat, add sliced mushrooms and sauté for 5-7 minutes.
Stir in minced garlic and cook for 1 minute until fragrant. Then, toss in fresh spinach and sauté until wilted, about 2 minutes.
Pour in the heavy cream and let it simmer, then stir in the grated Parmesan until melted.
Toss the cooked pasta into the creamy sauce, season with salt and pepper, and mix well.
Plate your dish, garnishing with fresh basil if desired.
Notes
Garnish with additional Parmesan for extra flavor. Store leftovers in an airtight container for up to 3 days.
