Ingredients

For the Casserole

  • 1.5 cups Long-Grain White Rice uncooked
  • 2 cans Cream of Chicken or Cream of Mushroom Soup (10.5 oz each)
  • 2 cups Milk
  • 1 cup Water
  • 1 envelope Onion Soup Mix (1 oz)
  • 1.5 cups Shredded Cheddar Cheese
  • 3 pieces Boneless Skinless Chicken Breasts or Thighs chicken thighs preferred
  • 1 tsp Kosher Salt
  • 0.5 tsp Black Pepper

Instructions

Casserole Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with butter or cooking spray.
  • Whisk together rice, cream soup, milk, water, and onion soup mix in a large bowl.
  • Pour the rice mixture into the greased dish and spread it evenly.
  • Sprinkle half of the shredded cheddar cheese over the rice mixture.
  • Season the chicken with salt and pepper, then lay it over the rice.
  • Cover the dish tightly with aluminum foil and bake for 1.5 to 2 hours.
  • Remove foil and top with remaining cheese. Bake uncovered for an additional 10-15 minutes.
  • Let rest for 15-20 minutes before serving.

Notes

Optional: Add a sprinkle of fresh herbs like parsley or chives before serving for enhanced flavor and color.
